Canopée

Referring to the placement of a parcel just above village roofs, which gives the impression of being above a 'canopy', this is a wonderfully pure expression of Chardonnay. From Saint Véran, in a place called Chaud'eau, where the soils are very calcareous. Expect a wine that is chiseled and takes on the perfect balance of freshness and tension. 

Grown from vines that are an average of 40 years old, at an altitude of 400m. In the cellar, the grapes are directly pressed and gravity fed into 400L and 500L barrels for fermentation. Afterwards, the wine stays unracked on its lees in old barrel for 10 months before bottling unfined and unfiltered.

Tasting notes

An inviting white burgundy, one that is so typical of the style of Saint Véran. A lovely rounded green apple fruit flavour which has good length. It has more texture than Les Fees and the fruit lingers longer. A fine introduction to the Clos Sauvage range, and somewhat in the middle of their offering. Delicious!
