Another example of deliciousness from Clos Sauvage. On this occasion, a Bourgogne Blanc that firmly punches above its weight. Yes, it's hallmark in style and approach, but we are fully committed to enjoying this straight-laced Chardonnay marvel. 

From just one hectare in 'Clos des Rochettes', this is a unique terroir, which is perched on the edge of steep cliff (hence the 'vertigo' reference). The vines are 25 years old, planted on shallow soil directly into granite bedrock. The grapes are direct pressed and gravity fed into steel tanks. After fermentation the majority of the wine stays in steel, although 20% is typically aged in barrel for six months, with the remaining 80% in vats to preserve purity of fruit. The wine stays on fine lees for 6 months before bottling with a tiny sulphite addition. 

Tasting notes

A high quality Bourgogne Blanc that hits the mark. It has an aromatic and enticing nose, almost floral, that is full of freshness and finesse, with layered citrus flavours. The trademark is the salinity they obtain on all their whites, which it absolutely nails right here.
