Genuinely bonkers even attempting this, let alone pulling it off. A wine that tastes like a Côteaux Champenois, yet is located many miles from the home of still wines made in Champagne.
For clarity, this is a Blanc de Blanc made from a blend of Pinot Noir and Champagne (hence the name, "Pich"). The Pinot is from their own vineyard, while the organic Chardonnay is purchased from a friend. Another creative and pristine bottling from Domaine de Thalie. There is no limits to the man's imagination and skills. Take your time and enjoy!
Tasting notes
Just look at it. What a colour! A lovely, pink-ish liquid in the glass thanks to the Pinot. It has velvety, luscious texture that results in a heavenly drinking experience. It's fresh, yet creamy and delicate, with notes of peach coming to the fore. A wine of real finesse. Such good value! Dare to be different and try this stuff.
