
Santyuste
There is something wonderfully quirky about this wine, and hard to believe it originates from the middle of Spain. As an introduction to her single plot vineyards, this is considered Esmeralda’s village level wine, yet it is also a flagship of the winery. A blend of four Verdejo parcels of the estate, which are located around 800m above sea level. The vines themselves are between 180 to 230 years old, which is quite astonishing.
Grapes are directly pressed and feed into stainless steel tanks to ferment spontaneously with the exclusive use of indigenous yeasts. Aged on fine lees for 9 months and bottled without filtration nor fining.
Tasting notes
Intriguing and thought-provoking, which means we are deep into Roy's territory. There is a nice tension, minerality and savoury quality. Dried herbs and an almost brine like edge to the mouthfeel. Salty and almost slightly oxy. Totally unique. Wow!
