
Bourgogne Aligoté
Plying your trade as head winemaking at the sublime Simon Bize estate counts for something. It also shines through big time in this Aligoté and it's a compliment to say that this wine would not be out of place in the aforementioned producer's stable.
Sourced from two sites, one in Savigny on clay and marl and the other in Echevronne on clay-limestone. Both parcels are found on flatter land with a south-west exposure. Meticulous attention to detail reigns supreme here. The juice is directly pressed, followed by a 12hr period where the grape must settle before racking, which helps reduce any need for filtration. The juice is then transferred to a mixture of 228L and 500L barrels where it slowly ferments dry over 60 days, before ageing for 12 months in barrel and 8 in tank before bottling.
Tasting notes
A great, textbook expression of Aligoté. Despite the difficulties with the 2021 vintage, this is a beautifully made wine. It's fresh with such lovely texture. It has crisp, lively aromas with notes of apple and lime that you would expect. Pretty, with plenty to keep you coming back for more.
