A gorgeously textured chardonnay from Leynes, southern Burgundy. Saint-Véran is where it's at, from one of the most renowned parts of the appellation, in Mont Saint-Pierre. An area known for beautiful minerality, this juice nails it. So precise and gorgeous.
From vines with an average age of 40 years old. 100% chardonnay, grown on limestone with a very thin layer of clay. The grapes are direct pressed and gravity-fed into 400L barrels (used) for fermentation. The wine then stays unracked on its lees in barrel for 12 months with the occasional battonage. Bottle unfined and unfiltered with a very tiny sulphite addition. Savour the salinity and long, persistent finish.
Tasting notes
A wine that doesn't give much away. A restrained nose, though immediately you get the sense this is a refined drop. Not too much fruit and barely any trace of oak barrel. Clean as a whistle and really tasty minerality. Beautifully made.
